Coconut Milk Sweet Potatoes

1 1/2 pounds sweet potatoes
3/4 cup coconut milk
1 tablespoon minced fresh ginger
1/2 teaspoon sea salt
1/2 tablespoon grated orange peel
1 tablespoon orange juice


Cooking Instructions

1. Prick sweet potatoes with a fork in several places. Place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.

2. When cool enough to handle, peel off and discard skin. Transfer the sweet potatoes to a oven safe pan and mash thoroughly with a potato masher. Add remaining ingredients; stir well. Reheat in the oven for 8 to 10 minutes. Serve warm.
